Eggless Zucchini Beetroot Cake

Recently my friend, Donna announced a cooking challenge in her foodie group "Kuch Khatta, Kuch Meetha, Kuch Teekha "[KKKMKT]. Challenge was to prepare a cake without the use of white flour, white sugar and eggs. I had attempted cake recipes that would go with this theme but then I had already posted those recipes on her group and they were Eggless Ragi Banana Cake, Green Moong Savoury Cake and Eggless Savoury Semolina Cake. Moreover, I wanted to try something with oats flour and this led to my search for its recipe that would fit into this theme. After browsing through different recipes [which made me realize I have to attempt many similar recipes for a nutritious cake], I zeroed down to Oats Carrot Savoury muffins recipe from Divya's culinary journey and decided to adapt her recipe. I made use of zucchini and beetroot together instead of carrots as I didn't have them at that time. I baked them in different cake pans as well as muffin molds and hence you see those three layers !

Avocado Hummus On Crackers

I [infact we all at our place] just like hummus and it was only few months back when I finally succeeded in making this favorite dish at home. You can read about that recipe here. For me hummus is a low caloric, nutritious and a highly satiating snack. I love it for the countless ways we can use it in any kind of meal. There are n number of ways to flavor the basic recipe. Today I am posting a version of hummus that's been flavored with avocado. In a way you can say this is milan of hummus and guacomole ;). I topped it on crackers garnished with cherry tomatoes and mint leaves and served them as a tea time snack !

Pasta Upma

I have prepared this dish in similar way as I do upma for kids tiffin or breakfast/snacks for them 

Now why this experiment of using farfalle. One of the weekend my elder one had some rehearsal practice at school and that put me in situation with less time on hands. In such situations, I opt to prepare the easiest as well as filling recipes for breakfast and upma tops the list. As I start assembling the ingredients, my struggle to locate the new packet of semolina which was brought few days back begins. [Yes sometimes the unorganized me ... don't realize the place where I put the stock in a hurry and then face such situations] With not much time in my hands, I grab the packet that was right there in front of my eyes, a packet of farfalle waiting to be used. Kids enjoyed this upma and kept demanding for more! Try this incidental variation and I am sure everyone in family would love it.

Sesame Jaggery Laddoos/ Tilgulache Laddoo

Makar Sankranti celebrated as a harvest festival marks the beginning of Sun's journey from Dakshinayan to Uttarayan when it enters the zodiac sign of Makar rashi (Capricorn). This is one of the few Hindu festivals which is celebrated on same date , i.e 14th January every year. This festival known by different names is celebrated with varied customs in different parts of our country which you can read over here

Since the festival falls during midwinter, the food prepared  during this festival would be from the ingredients that would provide high energy and keep the body warm. Most of the sweets prepared for this festival includes the sesame seeds [til] and jaggery [gul].

Happy Makar Sankranti, Botnevri Kheeri - Guest Post 1

After displaying my collection of books here bought during my last trip, today I would like to mention about my recent and priceless addition to Konkani/ Amchi cuisine and that is "The Konkani Saraswat Cuisine" book. Though the FB page of the book mentioned its availability through Sapna Book House in Bangalore, I tried to meet the author, Mrs Asha Satish Philar and was lucky enough to get an autographed book from her. It was like dream come true meeting her, holding her hands, talking to her and the excitement got dugna when we [me and family] got to relish some delicious snacks and goodies prepared by aunty herself.

Soya Chunk Baby Corn Stirfry

Every year during our annual vacation, shopping for kids books [informative as well as story books] is the top priority. Finally at the end of the trip, the books are in huge volumes and numbers [because they want to possess every book that they come across] and our luggage filled with these books looks bloated up ! So most of the times I end up not buying any cookbooks inspite of carrying a long list. This vacation it was different ... no no their books topped the list but with less time available they were fewer in numbers leaving some space in our suitcase. 

I plan for quick book shopping, head towards Sapna Book House and in no time get deeply engrossed browsing through the vast collection of books from cooking, gardening, crafts, photography to general topics. Amidst this, I happen to meet a person in spotless white khadi kurta and pyjama, we exchange hello and cross our paths after which I realize it was Gulzar saab who happened to visit the stores that particular time. In short, the trip to bookstore turned out to be fruitful meeting famous poet, lyricist and then picking up my collection.

In the pic below you can see the collection that was bought home and the excitement was so much that instead of packing them I sat down to browse through the recipes. Poor hubby who was sitting besides to help me in packing gave a look with question mark on his face, wondering if the job would be done in time ... ha ha ha. I had to control my untimely temptation by quickly browsing through the index of just one book "100 Soya Foods" by Mrs. Mallika Badrinath

Cupcake Idlis

A twist to traditionally served idly chutney, here is another dish I prepared for bday celebration at home. When I saw them for the first time posted by a FB member on a food group, it was a visual treat and idlis never looked so appealing to me. Since then have been thinking and trying of recreating similar magic at home. After initial failed attempts, now I am happy that I managed to get them as you see in below pics, though chutney icing designs are still not upto the mark. I smeared the top of idlis with chutney and created designs using a fork. Hopefully with future attempts I should be able to do them perfectly with piping bags. We can use any other chutney such as tomato chutney, red chutney, roasted bell pepper chutney, mixture of hung curd and tomato sauce, chocolate sauce, chocolate glaze, etc as topping.

Savoury Semolina Cake

To get back on track after vacation is one of the toughest task. Although, me and hubby back to office and kids back to school, it takes atleast a week's time to overcome vacation hangover and get back to routine with million things, especially my cooking. 

Now with "S" bday around, how can I sit back and laze around. Decided to enter my cooking mode as soon as possible and that led to browsing through my recipe books and bookmarks in search of a recipe to prepare something special for him on his special day. I got charged up as I came across the video bookmarked for later viewing. This video from Anjum Anand with BBC cookery show 'Indian Food made Easy' demonstrated the recipe of "Savoury Semolina Cake". The cake though savoury, I knew it was the perfect treat I could make for the bday boy. Many food bloggers had attempted her recipe which is very easy with use of easily available ingredients and involves simple process of mixing. The best part being the recipe is eggless and is healthy with lots of vegetables and no butter at allI was damn sure, baking this recipe was the instant cure to my post vacation blues and went ahead to try it. Served the cake slices with hot tea and I am glad that though an unusual way, I could prepare this savoury treat in time to celebrate the occasion at home. We relished having the slices with hot tea and kids with flavoured milk.

Methi Theplas - Delicious Flatbread From Gujarat


Thepla is a Gujarati food made from wheat flour and gram flour, mixed with dry or fresh fenugreek leaves and flavored with spices. They taste delicious with pickles, curds or any dips. As they stay fresh for 4-6 days with no need to refrigerate, they serve as a great travel food or picnic snack.
