Corn Sundal

This festival is celebrated in different ways for nine days across different parts of India. All the nine days are considered auspicious and spent in worshiping Mother Goddess, in her nine different avatars. Devotees generally fast, consume special food/ vrat ka khana and many of them avoid the consumption of onion garlic. Variety of special foods are prepared as neviedyam and offered to God which is then distributed as prasad amongst friends and relatives. Ingredients

1 cup corn kernels
1 green chili, finely sliced
1 red chili
1/2 tsp mustard seeds
1/2 tsp urad dal
1 tbsp grated coconut
Few curry leaves
Pinch of hing
Salt to taste
Oil for seasoning

Method:

Cook the corn kernels either by stove top method or using microwave. Keep them aside.

In a pan, heat 1 tsp of oil. Add mustard seeds and as they pop, add urad dal. Saute it for few seconds till dal turns brown. Now add red chili, finely sliced green chili, curry leaves and hing. Pour in the cooked corn, salt as per the taste and stir for a minute. Finally add fresh grated coconut and keep it on low flame until done. Serve it warm garnished with coriander leaves and lemon juice [optional].
